PETITE ORGANICS

The frilly white wedding cake is now semi-retired and has been replaced with organic ingredients, modern design, natural beauty and a bit of whimsical flair.

People are more concerned than ever with making the right choices for their health and that of the planet.

The trend towards small cakes, tarts and, of course, cupcakes is infiltrating organic bakeries around the world. Leading organic patisseries and bakers such as Miette, Petite Patisserie and Back to Earth Organic Catering transform environmentally friendly organic ingredients into captivating “jewels”. These miniature beauties delight the eye, but most importantly, they evoke pure enjoyment to the palette. Miette offers “simple and sweet décor, small (maximum 8-inch) wedding cakes and a larger variety of smaller desserts” all made from local and organic ingredients.

What creates this elevated and socially responsible palette pleasing experience? High-quality seasonal ingredients primarily available from local farmers (such as almonds and blood oranges) as well as ingredients from larger organic producers like Dagoba Organic Chocolate. Seasonality, artistry and freshness are now in demand by sophisticated couples for their weddings.

According to Rachel Leising of Petite Patisserie, beautifully designed individual desserts continue to set trends as well as uniquely designed cakes. Organic white chocolate mousses, dark chocolate pot de crème and crème brulee are just a few of the luxurious fillings that lace today’s creations.

Like their supplier farmers and vendors, Executive Chefs Rachel Leising of Petite, Meg Ray of Miette and Stephanie Hibbert of Back to Earth are passionate about sustainability for future generations as are most of their clients. “If you’re going to eat x amount of calories, you want then to be the best,” says Miette’s Caitlin Williams. “People are more concerned than ever with supporting their local economy and with making the right choices for their health and that of the planet.” BOND
